Spicy chicken with juicy rice and mushrooms

Grilled Mushrooms: If you don't have an oven, this is a great substitute for pilaf

Ingredients:

- 400 g of white chicken meat,
- 1 onion,
- 1 carrot,
- 3 cloves of garlic,
- 200 g of mushrooms,
- 400 g of rice,
- 1 spoons of chopped parsley,
- 1 spoon of powdered saffron,
- 1 small spoon of powdered ginger,
- salt as needed,
- ground pepper,
- about 4 dl of water,
- 2 spoon of oil.


Preparation:

Cut the meat into cubes. Grind the chopped onion, garlic, mushrooms in leaves, meanwhile the carrot on a grater. Wash and drain the rice well.

Fry the meat in oil for ten minutes, add the chopped vegetables. Fry everything for 15 minutes, until the vegetables soften and the liquid evaporates.

Add the rice and stir on fire for 2-3 minutes, add salt, ground pepper, chopped parsley.

Shake the powdered saffron and powdered ginger in the water, add the meat and vegetables, cover with a lid and cook on low heat until the rice softens and absorbs the water.

If the rice does not soften, add water as needed.
