A simple recipe for a perfect homemade meal

  • 200 g rice
  • 200 g chicken meat (fillet), cut into cubes

Preparation

1. Preparation of chicken broth
In a separate pot, heat the chicken stock and keep it hot at all times – this is the key to a good risotto.

2. Sauteing the onion
In a large, shallow saucepan, heat the olive oil and half the butter. Add the onion and sauté over medium heat until translucent (it should not brown).

3. Chicken meat
Add the chicken and sauté for 5–7 minutes, until lightly browned and juices run clear. Season with salt and pepper.

4. Rice
Add the rice (do not wash it!) and lightly fry for 1–2 minutes, stirring constantly, so that each grain is coated with oil.

5. White wine
Pour in the wine and stir until the alcohol evaporates, leaving only the pleasant aroma.

6. Gradually adding the broth
Add a ladle of hot broth and stir until the rice absorbs the liquid. Continue like this, ladle after ladle, stirring constantly.

7. Cooking to perfection
After 18–22 minutes, the rice should be creamy but a little firm in the center.

8. Finalization
Remove from heat. Stir in remaining butter and Parmesan. Taste and adjust seasoning if necessary.
