Salad with lentils, tomatoes and onions

This salad is a fresh dish and you can serve it as a second course.

Ingredients

▪ 250 g of lentils
▪ 2 spoons of green onion (chopped)
▪ 6 spoons of olive oil (extra virgin)
▪ 10 cherry tomatoes
▪ 1 chili pepper (fresh)
▪ white pepper (ground as desired)
▪ 1 onions
▪ 12 basil leaves
▪ salt


Preparation

To prepare this salad, first boil the lentils in a pot of water and salt.

Let the lentils boil for 20 minutes. After removing them from the heat, pat them dry and let them cool.

Meanwhile, clean and thinly slice the onions. Chop the green onions, cut the red pepper into circles and cut the cherry tomatoes into quarters.

In a small bowl, mix a little olive oil, salt and ground pepper. Stir well and set aside.

Then take the lentils, already cold, and put them in a deep bowl. Combine them with the ingredients we prepared a little earlier and stir well. Then throw in the mixture created with oil, salt and pepper. Add some chopped basil and stir again to mix all the ingredients.

Your salad is ready, accompanied by some fresh basil leaves.
