Turkish-style beans: No meat, but an unusual ingredient

Barbunya Pilaki is a traditional Turkish specialty, namely beans boiled in olive oil with onions, garlic and tomatoes.

And, yes, that unusual ingredient is definitely tomatoes.

This is a very tasty dish, which Turks consume as a light lunch, as part of a meze, or as a second course of roasted meat or fish. It is served at room temperature or cold, with a little lemon juice on top and parsley.


Ingredients:

▪ 500 gr of colorful beans
▪ 3 carrots
▪ 2 onions
▪ 1 green pepper
▪ 4 cloves of garlic
▪ tomatoes as desired, to taste
▪ 3 spoons of olive oil
▪ half a spoonful of sugar
▪ 1 glass of warm water
▪ a handful of parsley
▪ salt and pepper
▪ fresh lemon

Preparation:

Soak the beans in water the night before cooking. In the morning, drain the beans and boil them until tender.

Heat the olive oil in a large pot and add the grated carrots. Let them sauté for a few minutes, then add the onion and pepper. Let everything simmer together for about five minutes.

Add the tomato, garlic and a glass of hot water. Add spices to taste.

Once the beans are boiling, let them simmer for another ten minutes. Now add the cooked beans to this vegetable mixture.

We cover the pot with a lid, but only halfway, and let this specialty simmer for about half an hour.
