Spanish-style seafood tagliatelle – iftar recipe for home

In an era where culinary traditions intertwine to create unique experiences, we present a slightly different recipe that brings the original Mediterranean flavor to your table.

With fresh Italian tagliatelle from Rana – a guarantee of quality and traditional craftsmanship – this dish combines the elegance and craftsmanship of Spanish cuisine.

Main ingredients

-400 g fresh Tagliatelle from Rana (Pasta produced using traditional Italian methodology, known for its quality and freshness, can be found on refrigerated shelves in supermarkets).

-600 g of mussels – carefully washed.

-200 g Shrimp (or Prawns) – carefully cooked.

-150 g Calamari – cut into rounds.

-2-3 tablespoons extra virgin olive oil I raised.

-2 cloves of garlic – thinly sliced.

-1 medium onion – finely chopped.

-1 fresh red pepper – chopped.

-200 g fresh tomatoes – for the sauce base.

-A handful of fresh parsley – chopped.

-Salt and black pepper – to taste.

-A little smoked red pepper – for an accent of Spanish flavor.

Preparation:

1. Preparation of the aromatic base:
Heat the olive oil in a large frying pan. Add the garlic, onion and, if desired, red pepper. Cook over medium heat until golden brown and fragrant, creating a base of flavor.

2.Preparation of seafood:
Add the clams, shrimp, and calamari to the pan. Deglaze with water, allowing the seafood's natural juices to permeate every flavor.

3. Preparing the Sauce:
Add the fresh tomatoes to the pan and cook for 8-10 minutes until they are cooked and thickened. Season with salt, pepper and add smoked paprika or saffron to bring out the Spanish character of the recipe.

4. Cooking tagliatelle:
In a large pot of salted water, boil the fresh tagliatelle from Rana for the recommended time (usually 2-3 minutes). Then drain carefully and mix immediately with the seafood sauce, so that each strand of pasta is covered in the intense flavors of the ingredients.

5.Finishing and serving:
Finish the dish by adding fresh chopped parsley and a touch of extra virgin olive oil at the end. Serve elegantly and set the table for a culinary experience that combines tradition with innovation.
