Eggplant stuffed with sesame and cheese: A very tasty lunch

Perfect lunch with very few calories

A light but tasty dish.

For such a lunch you need:


- 2 eggplants of medium size,
- 2 spoon of olive oil,
– ¼ of an onion,
- 1 cup of rice or 3 spoons of sesame,
- 1 cup of broth,
- 200 g of kačkaval,
- 200 g of marinated tomatoes,
– A little oregano.

Preparation:

Cut the aubergines into two parts, deepen the middle and bake the halves in the oven at 250 degrees Celsius for about ten minutes.

In the pan, fry the onion in olive oil, then add the middle of the eggplants, the meat juice and the rice (or sesame).

Cook for about ten minutes and then remove from heat.

Fill the halves of the eggplants (from which you have removed the middle) with the cooked mixture and top with grated kačkavall, then the marinated tomato and kačkavall again.

Bake everything in the oven for about 15 minutes at 200 degrees.
